Tomato Buttermilk Soup - Margaret Ullrich


If you've got a few tomatoes that were hurt by the frost, here's a soup for the good bits.
  

                        TOMATO BUTTERMILK SOUP

in a large pot heat       
2 tablespoons oil
1/3 cup chopped onion
cook until the onion is slightly browned

stir in
2 tablespoons flour            
-----
stir in
2 cups buttermilk                 
stir over low heat
-----
add
2 cups diced tomatoes
1 cup buttermilk
1/2 teaspoon salt
1/8 teaspoon pepper
2 tablespoons minced parsley
heat but don't boil
