Apple Cider Hot Toddy / Seasonal Drink Recipes / Hunting the Winnipeg Christmas Tree by Margaret Ullrich

 

Covid-19 is making us do strange things.
Well, okay, maybe they’re not all strange, but things we didn’t normally do.
Remember the toilet paper hoarding and the sourdough craze we went through back in the Spring?

On the news tonight they reported that people were rushing to buy real trees.
Yes, even people who normally didn’t do ‘the Christmas tree bit’ wanted a real, honest-to-goodness pine tree in the house.
All of a sudden everybody wants a real, over the top, Clark Griswold Christmas, starting with a real tree.
A tree about the size Clark had in ‘National Lampoon's Christmas Vacation’ is now the thing to have. About the folks who normally didn’t bother with a tree…
I picture rows and rows of popcorn garlands winding around that huge bit of wood.


The weather isn’t being deterred by the virus.
It’s winter, and, here in Manitoba, that means cold.
A toddy is a traditional cold remedy.
It’s perfect both for when you’re feelng chilled or a bit under the weather.

Some say the first toddies were made in 18th century Scotland, where folks added honey and spices hide the flavour of bad scotch.
Whatever… it’s become a folk remedy that, in moderate amounts, can warm you from head to toe.


Hints:

Don’t have apple cider? You can use apple juice or hot water.
For a tart flavour you can add a slice of lemon, or a few drops of lemon juice.

Don’t have bourbon? You can use almost anything alcoholic in a toddy, even tequila or gin.
Want a non-alcoholic hot toddy? Fine, don’t add the bourbon. It’ll still be warming.

If you want to prepare hot toddies for the gang after you’ve been tree chopping, it’s easy to increase the ingredients in a large pot.
Just let it simmer over a low flame.
Keep the bourbon and honey handy and let your guests ladle the apple cider mixture into their mugs.

You can add a few spices to each mug for an extra touch of aroma.

                        Apple Cider Hot Toddy

For two servings

Place in each of two heat-proof mug
1 1/2 ounces bourbon
1 teaspoon honey

Place in a saucepan
1 cup apple cider
10 whole cloves
2 cinnamon sticks
2 anise stars (optional)
Heat the mixture over medium-low heat.
Let  simmer about 10 minutes.
Strain the cider into the mug and stir.

For another broadcast of our CKUW radio program ‘2000 & Counting’ we planned to reminisce about when we had gone out into the woods to chop down a Christmas tree.
Yes, this was, and is, a popular Winnipeg Christmas tradition.
And, yes, in Manitoba it can get cold enough to make trees brittle!


God, it was cold.

I didn't know it could get that cold.
I didn't know I'd ever be stupid enough to be outdoors in that kind of cold.
I didn't know I'd been stupid enough to marry someone stupid enough to work with people stupid enough to be out in that kind of cold.

It was December in Winnipeg.

Paul and I had grown up in New York City. There people went to an empty parking lot where the trees had magically appeared, like the pre-wrapped ground beef at the local supermarket. No questions asked. No one wanted to get too personal with an ornament that would be out with the trash in a matter of weeks.

At the New York parking lot we'd browse, find a tree we liked and switch the price tag with the cheaper tree which no one liked. Then we'd carry the tree to the clerk, who gave us the fish eye as he noticed the fullness of such a "good find", sighed and took our money. The whole deal was done in ten minutes. Another Christmas had begun.

Apparently, that isn't good enough for Winnipeggers.
Oh, no, they have to get down and dirty with their holiday bushes.


I'll never forget how happy Paul was when he came home and told me we'd been invited to join his co-workers, a group of Winnipeggers, for a real, old-fashioned Christmas experience. If I'd had a clue I'd have realized that giving birth in a barn, unaided, would've been an easier old-fashioned Christmas experience.
We were going to chop down a real Christmas tree, just like our ancestors.

Well, my parents are from Malta, a sunny Mediterranean island. It just wasn't in my genes to know how to dress for a freezing, miserable, forced march through a blizzard-hit forest. The windchill - which I still didn't understand - was in the "exposed skin can freeze in 2 minutes" range.

That didn't sound good, so I said, "Thanks, but no thanks."


Somehow Paul convinced me that his entire future career prospects, our unborn children's college fund, our grandchildren's lives and our golden years' security and comfort would all go up in smoke if I didn't join in the mighty tree hunt.

His Jewish co-workers were going. Everybody, even that ditzy receptionist who always dressed like a showgirl wannabe with skirts up to there, was going.

So, we were going.


God, it was cold.

I thought I had dressed warmly.
That fink, the ditzy receptionist, showed up looking like the Michelin Man. She was ready to march to the North Pole for the perfect tree, if necessary. So were the three other women co-workers. The other wives - who all knew better - had begged off. One was even pregnant. Or so she said.

I was alone with four career women who were full of the 1970s "I am woman, hear me roar" career fever. While they talked shop I felt as welcome as a lump of coal in a kid’s Christmas stocking.

The Jewish co-workers - who I had hoped would keep the tree hunt frenzy within limits - had turned into lumberjacks. They were also ready to march to the North Pole for the perfect tree, if necessary.

After walking five minutes I couldn't feel my toes. We hadn't even gotten out of the parking lot. I was doomed.

I didn't know it could get that cold.
We marched. Finally, someone approved of a tree. The men chopped. The tree crashed. The branches that hit the ground broke off the tree.

I said, "The bare side could be placed against a wall."

The heat from their glares should have restored my circulation. It didn't. We marched. Someone approved of another tree. The men chopped. The tree crashed. It broke.


God, it was cold.

We were doomed to spend all day wandering like Flying Dutchmen on a quest to find the perfect unbreakable tree. The lot was littered with other broken felled trees. Some trees had landed across their comrades in a criss-cross pattern that looked like a cradle.
A cradle, something soft, something to receive and hold...

Hold it… something to catch a damn tree!

Dripping snot and tears had frozen my mouth shut. If I'd had the equipment I would've written my idea in the snow. I slapped my face trying to restore circulation to my lower jaw. Finally my lips parted. I clutched Paul's arm.

"Cradle... tree... cradle," I mumbled and criss-crossed my arms.

The women thought I was pregnant and wanted a homemade cradle. Thank God, months of marriage, misery and love had united Paul's mind to mine. Months of marriage had also taught us that Paul was no carpenter. He knew the homemade cradle idea was bunk. Paul caught on to my pantomime and told the others of my plan.

Someone approved of another tree. It could land on four broken trees. The men chopped. The tree landed on its fallen comrades. It survived.
We marched. Someone approved of another tree. It, too, survived.

Christmas was saved.


God, it was cold.

I didn't know it could get that cold.
I couldn't believe it.
Some fool was planning the next year's tree chopping expedition.

Anna Sultana's Lemon Cranberry Muffins / Baking Powder Substitutes /Brunch, Dessert and Drink Recipes for 2


Passover begins tomorrow.
Easter is this Sunday.
Yes, time flies when you’re confined to home for your own safety.

We’ve explored a few uses for capers in the easy Pork Chops in Lemon Caper Sauce post.
And I’ve posted a Cornish Hens recipe, along with links for Chicken and Meat recipes for 2.
The Coconut Cake and Quick Fudge recipes are fine, if you still have the kiddies at home.

If you’re cooking for yourself, or for yourself and a spouse or partner, the cake and fudge might be too much.
Especially if you're seniors.
This post has a muffin recipe, which can be used for a brunch or a dessert, and links for other brunch and simple dessert recipes, as well as some drink recipes.

Hints:

You don’t have any more baking powder? Save yourself a trip and make your own.
Cream of tartar combined with baking soda is an excellent baking powder substitute. 
For 2 teaspoons baking powder: 
Combine 1/2 teaspoon baking soda with 1 1/4 teaspoon cream of tartar.
To make it shelf-stable add 1/2 teaspoon of cornstarch to the mixture.

Lemon juice and vinegar are acids, so they can be used to make a substitute. 
For 1 teaspoon of baking powder: 
Combine 1 teaspoon lemon juice or white vinegar plus 1/4 teaspoon baking soda 
These ingredients will alter the flavour, so use it for recipes like chocolate cake.

The acidity in buttermilk and sour milk can also work in a recipe.
For 1 teaspoon baking powder: 
Combine 1/2 cup buttermilk or sour milk and 1/4 teaspoon baking soda. 
Reduce the liquids in the recipe by 1/2 cup to maintain the desired consistency.

Only use milk that is soured but has a tangy smell. Throw away lumpy or rancid milk.
You can also make sour milk: 
Combine 1 tablespoon lemon juice to 1 cup milk and letting it sit for 2 minutes.

To substitute for self-rising flour:
Combine 1 cup flour with 1 1/2 teaspoons baking powder and 1/2 teaspoon salt.

If using regular cranberries: 
Take 1/4 Cup of the flour, add it to the 1/2 cup of berries then add it all to the mix.
The coating of flour helps keep the berries from sinking to the bottom.

Raisins, or any cut up dried fruit, such as apricots, would also work.


                        Lemon Cranberry Muffins

Grease 12 muffin cups, or line with paper muffin liners

Place in a measuring cup
3/4 cup milk
1/4 cup lemon juice
Stir to combine. Let sit 10 minutes.

Place in a large bowl
2 cups all-purpose flour
1 1/4 cups white sugar
1 tablespoon baking powder
1/2 teaspoon salt

Combine in a small bowl
3/4 cup milk
2 eggs
1/2 cup vegetable oil

Lightly toast
1/3 cup slivered almonds

Preheat oven to 400ยบ F 

Stir the egg mixture into the flour mixture until just moistened.
Do not overmix.
Fold in 
1/2 cup dried cranberries or 1 cup cranberries, halved 
Fill the prepared muffin cups two-thirds full.
Sprinkle with the toasted slivered almonds
Bake in preheated oven 18 to 20 minutes. 
A toothpick inserted into a muffin should come out clean.
Cool for 5 minutes before removing from the pan to a wire rack. 

If you want to dress up your muffins you can makes this lemon glaze.
Combine in a small bowl
1 Cup confectioners’ sugar
2 Tablespoons lemon juice
Stir until smooth.
Place the muffins on a plate and drizzle with the glaze.

Hunting the Winnipeg Christmas Tree by Margaret Ullrich / Seasonal Drink Recipes

Slurpees, Water & Golden Milk Lattes / Friday the 13th Supermoon Solar Eclipse


Over the years I’ve posted about Winnipeg’s love affair with the Slurpee.
One of the things Winnipeg prides itself on is being "The Slurpee Capital of Canada".
Oh, well, it’s better than being known as other types of capitals I can think of.

I know Slurpees are pure sugar.
And, yes, the resulting brain freeze headache is something this side of a kick in the head. 
But we are Winnipeggers and Slurpees are given away FOR FREE on July 11th!

A few years ago, as we sat outside sucking the slush and freezing what few remaining brain cells we had, the 7-11 manager walked by and said, “It tastes better when it’s free, doesn’t it?”
Oh, yeah!!

Paul and I have enjoyed quite a few Slurpees since we moved to Winnipeg in 1975.
But, to be honest, water is becoming our preferred summer drink.

Ah… water!
It is the single most important thing your body needs to survive. 
Really. You can survive longer without food than without water.
Water makes up more than half of your body weight.
It helps you digest your food, improves your skin and hair, and helps you to maintain a healthy weight.
Feeling hungry? Have a glass of water - or a cup of broth in the winter.
Way less calories than having some junk food and it's good for you.

Water helps your body do a lot of things. For example:
Water in your blood carries oxygen to all the cells of your body.
Lymph, a fluid that helps you fight off disease and infection, is mostly water.
Sweat rids your body of toxins and helps you to stay cool.

Don’t like plain water? No problem.
Try a carbonated water, such as mineral water or seltzer. 

You can also add natural flavour to your water.
Add slices of cucumber to a pitcher of water, stir, and place the pitcher in your fridge for a great, low calorie, inexpensive refresher.
The cucumber makes the water smoother and adds a slightly tangy flavour.

Lemon, lime, or orange slices, both alone or in combination, can also add a punch to your glass of water.
The citrus slices also combine well with slices of cucumber.
Mix or match and stay healthy!


Golden Milk Lattes are also good for what ails you.
Turmeric, ginger and cinnamon are said to have health benefits.
As well as being tasty!


Hints:

Unsweetened almond milk can be used instead of regular milk in this recipe.
You can use a 1 inch piece of peeled fresh ginger in place of the ground ginger.
If you have fresh turmeric, substitute a 2 1/2 inch piece of peeled fresh turmeric.
If you do use the slices of fresh ginger and turmeric, transfer the cooked mixture to a blender and blend until smooth.

You can also enjoy Golden Milk Latte without refrigerating before serving. After you stir in the vanilla let it sit for 10 minutes, then pour the milk into a glass and enjoy.

                        Golden Milk Latte

Makes 4 servings

Combine in a medium pot
1 teaspoon ground ginger
2 teaspoons dried turmeric
1 teaspoon ground cinnamon
1 to 4 teaspoons honey or 1/4 Cup golden yellow sugar 
1/4 teaspoon salt
Stir in 
2 Cups milk

Bring to a simmer over medium heat, reduce heat to low and, stirring occasionally, cook for 15 minutes. 
Remove from heat and stir in
1 teaspoon vanilla extract 
Let cool to room temperature.
Place in the refrigerator and allow to cool completely.

Fill 4 tall glasses with ice.
Stir and divide chilled latte between the glasses. 
Garnish with ground cinnamon and serve.

The term Dog Days of Summer means the 20 days before and 20 days after the alignment of Sirius with the Sun (from July 3 to Aug. 11).

Yesterday Jupiter became stationary in the night sky and resumed its eastward course, meaning Jupiter will no longer be in retrograde (westward motion). 
If you’re in the Northern Hemisphere you can see the planet high in the southwest sky as soon as darkness falls.

July 12 - New Moon at 10:48 p.m. EDT.  It is completely invisible to the naked eye.

July 13 - The Friday the 13th supermoon solar eclipse will be the first of its kind since Friday the 13th on December 13, 1974. The partial solar eclipse begins after dark at 9:48 p.m. EDT, and unfortunately will only be visible to penguins, as the viewing area will fall in open waters between Australia and Antarctica.

July 14 - Catch the waning crescent Moon pair up with Mercury after sundown. You may need binoculars to spot them, especially if you live in the mid-northern latitudes like the U.S., Canada, and Europe.

July 15 - Following its proximity to Mercury, the waning crescent Moon with move on to Venus. With the unaided eye or binoculars, you may be able to spot the soft glow of earthshine (twice-reflected sunlight) on the nighttime side of the Moon.

Anna Sultana’s Strawberry Sangria and June’s Full Strawberry Moon

The May we had in Winnipeg has been on the brisk side.
To be honest, so cold we had the heat on last week.
But now it’s June, and that means Summer.
Okay, not really for three more weeks, but the cottages have been readied and everyone has summer on the brain.

Sangria is perfect for this time of year.
It has something alcoholic (usually wine - either red or white) and chopped fruit. 
The alcohol is a bit watered down, so there’s less risk of dehydration.
Think of it as a warm weather version of mulled wine.
In honour of June’s Full Strawberry Moon, why not make a pitcher of Strawberry Sangria.

People first talked about sangria in the 18th century. 
Some say they got the name from the Spanish word sangre (blood) because of the red colour of the drink.
Others say it comes from Sanskrit as in the Urdu word sakkari (sugared wine).

Whatever… in the late 1940s Hispanic Americans and Spanish restaurants introduced Sangria to the United States and it really became popular when the 1964 World's Fair in New York was in full swing.


Hints:

Dry white wines such as a Rueda, Jumilla, or Valdepeรฑas are traditional for sangria with white wine.
Other popular choices are Pinot Grigio, moscato and Sauvignon Blanc.
You can also use red or rose wine.

Don’t have strawberries? No problem. You can use whatever fruit you have on hand, such as apples, peaches, melon, berries, pineapple, grapes, kiwifruit or mangoes. 
You can sweeten it with honey, sugar, syrup, or orange juice. 
Seltzer, Sprite or 7 Up can be used to top up the pitcher. 

Allow the sangria to mellow in the refrigerator for several hours, or a full day.
Add the soda (if you’re using it) just before serving.
Have on hand plenty of ice to refill the bucket. 
This way your friends can add as much ice as they want, and the flavour won’t get watered down.

For the kiddies you could make sangria using ginger ale, lemon juice, orange juice and sugar.
And lots of fruit!


                        Strawberry Sangria

Yield: 8 servings

Cut into thin slices
1 lemon or orange

Slice
3 Cups fresh strawberries

Pour into a large pitcher 
2 750 ml. bottles of dry white wine (see above for ideas)
Add 
2 Cups strawberry-cranberry juice or strawberry nectar or pomegranate juice
the sliced strawberries
the lemon or orange slices

Cover the pitcher and place it in the refrigerator. 
Let chill for several hours or overnight.
When ready to serve fill glasses 3/4 full with the sangria mixture.
Be sure to get some strawberries and lemon or orange slices in the glass, too. 

Top off each glass with 
Chilled club soda or sparkling water
Garnish with 
mint leaves and a whole strawberry

Have on hand plenty of ice for people to serve themselves.

June 3 - Venus is farthest from the Sun. Look to the south after sunset to see the waxing gibbous Moon just 2 degrees north of Jupiter. The Moon and Jupiter will be two brightest and the first objects out at dusk. The bright star Spica in the constellation Virgo, will also join the pair, below them and to the left.

June 4 - Look to the east after the Sun sets to see this trio: the waxing gibbous Moon with the star Spica below it; to the right is Jupiter.

June 9  - Full Strawberry Moon at 9:10 a.m. See how this Moon got its name in this short Farmers’ Almanac video. When the full Moon rises it will be just past apogee - its farthest point from Earth, at a distance of 252,526 miles. It will, in fact, be the smallest (to us) full Moon of 2017.  See if you can detect its smaller-than-normal size that night. Compared to the so-called “Supermoon” of last November 14th, the June full Moon will appear 12.3 percent smaller.

June 12 - Look for the Big Dipper asterism, the most recognizable star pattern in our night sky. It will be high in the north during the evening hours during the month of June.

June 14 - Earliest sunrise of 2017. This happens every year around mid-June, despite the year’s longest day - the Summer Solstice - is one week away.

Toast Canada's 150th Birthday with a Caesar on Victoria Day

This year Canada is 150 years old!

The Caesar Cocktail was created in Canada.
National Caesar Day is the Thursday before the Victoria Day long weekend, the kick-off to our long awaited summer.
Why not toast Canada’s 150th birthday with a Caesar Cocktail or two!


Ah, the Caesar Cocktail… it was one of those great moments in Canada’s history…
Walter Chell wanted to celebrate the opening of the Calgary Inn’s new Italian restaurant in 1969.
His invention - the Caesar Cocktail - quickly became a popular mixed drink.
It’s been said that over 350 million Caesars are consumed annually in Canada.

Chell said his inspiration came from the Italian dish Spaghetti alle vongole, spaghetti with tomato sauce and clams. 
He thought that if the mixture of clams and tomatoes made a good sauce it would make a great drink, so he mashed a few clams and then mixed the goop with vodka and other ingredients.
Brilliant or what!!
Well, Chell was a genius.
The drink was an immediate hit with the folks who went to the Calgary Inn.
Within five years the Caesar became Calgary's most popular mixed drink. 

Okay… here’s where it gets Karmic.
In 1970 Motts was developing Clamato, a mixture of clam and tomato juices.
That’s right, this happened one year after Chell created his cocktail.
Like I said, Karmic.

Clamato wasn’t as popular as Chell’s Caesar. 
But then somebody got a blast of inspiration and realized he could use Clamato to make the Caesar Cocktail.
An easier way to make an alcoholic drink?
Of course word spread like wildfire!
By 1994 half of all Clamato sales were made in Western Canada.
Motts claims that the Caesar is the most popular mixed drink in Canada.

The thing is, very few people outside of Canada know about the Caesar Cocktail. 
In the states it’s only known in bars along the shared border.
Most Americans just make do with a Bloody Mary. How sad!

Some say the Caesar is a hangover cure.
A 1985 University of Toronto study showed that drinking a Caesar when taking aspirin could protect a person's stomach from the aspirin.


In 2009, the Caesar Cocktail’s 40th anniversary, a petition to make it Canada’s official mixed drink was launched. Calgary’s Mayor, Dave Bronconnier, celebrated the drink's anniversary by declaring May 13 as Caesar Day.
Contests held across Canada in 2009 encouraged variations. Some ideas:
the glass being rimmed with Tim Hortons coffee grinds
Caesars with maple syrup
Caesars with bacon-infused vodka
Hail, Caesar!!

Want something to eat? Serve your Caesar with a Caesar Salad.


Hints:

The Caesar can be mixed in bulk and stored for a period of time before drinking.

Tabasco sauce and horseradish are frequent additions.
Vodka is occasionally replaced with gin, tequila or rum.
If you replace vodka with beer it’s called a Red Eye.
A drink without alcohol is a Virgin Caesar.


                        Caesar Cocktail

Moisten the rim of a highball glass with a lime wedge and dip into celery salt. 
Add 
1.5 ounces vodka
2 Dashes of Hot Sauce
3 Dashes of Salt and Pepper
4 Drops of Worcestershire sauce
5 ounces Mott’s Clamato 
ice 
Stir and garnish with a celery stick and a lime wedge.


                        Caesar Cocktail II

Moisten the rim of a highball glass with a lime wedge and dip into celery salt. 
Add
6 ounces Mott’s Clamato 
1 to 1 1/2 ounces vodka
2 Dashes of Hot Sauce
4 dashes Worcestershire sauce
Celery salt
Freshly ground pepper
ice
Stir and garnish with a celery stick and a lime wedge.

The Full Worm Moon, Easter, and a Planters' Punch Recipe for the Family


Well, it’s been a bit of an busy time.
A week ago we had Daylight Savings Time.
Sleepy or not, we soldiered on to bake traditional foods to celebrate St. Patrick’s Day, then St. Joseph’s Feast Day.
Yesterday was both the First Day of Spring and Palm Sunday.

That’s right, Easter is this Sunday.
I know, you haven’t finished setting all the clocks in the house and car ahead an hour.
Too bad.

Easter has to be held on the first Sunday following the first Full Moon of Spring, which is happening this Wednesday.
March 22 is the earliest Easter can occur, and April 25 is the latest.
No real reason, it just was decided to do Easter this way in the Fourth Century.
If you’d like to plan ahead, here are the dates for the next four Easters:
2017    April 16
2018    April 1
2019    April 21
2020    April 12
So, yes, it’s a bit early this year.
Too bad.


If you’re in the Eastern Orthodox Churches, thanks to the Julian calendar, you can ignore all of the above.
You usually have a bit more time.
Don’t gloat.

Yeah, family… gotta love it.


Planters' Punch is a simple cocktail made of dark rum, lemon juice, Grenadine syrup and a dash of Angostura bitters.
So it’s quick and easy to make more of  this punch to keep those glasses filled.
This recipe has been around a while.
The September 1878 issue of the London magazine Fun mentioned it.
The recipe is a classic that everyone will most likely enjoy.

In the 1942 spy thriller Across the Pacific Humphrey Bogart and Mary Astor both order a Planter's Punch at a bar in Panama.
The movie's plot was set on the eve of World War II.
If the writer thought a glass or two of Planters' Punch could help Humphrey Bogart get through an oncoming world war, well, who am I to disagree?


Hints:

Some people also add orange juice and pineapple juice.
The glasses can be garnished with a cocktail cherry and a pineapple slice.


                        Planters' Punch

In a large pitcher pour
a fifth of dark rum
1 Cup lemon juice
3/4 Cup Grenadine syrup
1 teaspoon Angostura bitters
Stir well.
Pour into tall glasses filled with ice.
Garnish with 
a cocktail cherry and an orange slice
