Anna Sultana's Qassata, Christmas Cheese Dessert, Maltese Style

Don't have a fruitcake. 
No problem.

Ma's Qassata is a really simple recipe that doesn't need to age.

Honest.

You can make it while the turkey's cooking.
And I'll bet you have the ingredients on hand.
Storebought spongecake is fine and freezes well.
Just so you know.

About the pan...
If your cake is round, use a round pan.
If you have a square cake, use a square pan.
This is like a pudding, so serve with spoons.

Prepare 
Instant vanilla pudding, 6 serving size

Slice horizontally
8 inch sponge cake 
Place one slice in pan

Sprinkle over the slice
1/2 cup white wine

Spread over the slice
1/2 cup apricot jam

Sprinkle on the jam
1/2 cup candied fruit
Top with the second slice.
Cover the second slice with the prepared pudding.

Sprinkle on
ground nuts, whatever you like (walnuts are nice)

Top with 
whipped cream

Chill in refrigerator.

Some folks use about a pound of ricotta
instead of the vanilla pudding.
Some also add 2 squares bitter chocolate, chopped
to the ricotta.

Hey, it's your dinner.  Suit yourself.
